Among the best known in the world, Italian food is characterized by its rich tasty products. Its specialties are widely available in thousands of international restaurants, well beyond the usual pasta and pizza genre. Its huge mass appeal has endeared millions to appreciate and rediscover the values of home cooking. Dozens of such varieties and species have arisen, while many more await discovery.
What to Order
Bruschetta (appetizer) – a garlic and olive oil topped toasted bread, sometimes also topped with chopped tomatoes and basil.
Garlic-Sage-Marinated Beef Pot Roast – red wine, tomato paste, and garlic give the fork-tender roast a robust, well-rounded flavor.
Carpaccio – invented by G. Cipriani in 1950 in Venice, Italy. It was named after the Renaissance painter Vittore Carpaccio who was noted for his use of red in his paintings. Thin slices of raw beef or tuna fish served with cold vinaigrette made with olive oil, or just olive oil and lemon juice and Parmesan cheese, raisins, carrot and peanuts, then simmered in a rich tomato-wine sauce until tender.
Osso Buco – using several dried seasonings simplifies this variation of classic osso buco – braised veal shanks prepared with wine and tomatoes.
Italian Pork Roast – this tender pork roast is rubbed with a mixture of garlic, rosemary, and olive oil and served with slightly sweet leek and apple sauce.
Prosciutto, Spinach, and Pasta Casserole – prosciutto (proh-SHOO-toh) is a spicy, cured ham originally made in Italy. You can substitute cooked lean ham if you like.
Fish Fillets with Red Pepper Sauce – use the freshest fish fillets you can find, since this sweetened red pepper sauce, seasoned with fresh basil and red wine vinegar, will go with most varieties.
Linguine with Garlic Shrimp – no need to fear the amount or garlic in this delicious dish since it’s roasted to a mellow, buttery paste. It also has many other uses – spread it on Italian bread, stir it into mashed potatoes, or add it to mayonnaise for sandwiches.
White Clam Sauce with Spaghetti – Italians generally does not top seafood sauces with grated cheese. For added texture, sprinkle on some toasted bread crumbs instead.
Shrimp Fettucine with Wine Sauce – a fresh combination of shrimp, tomatoes, mushrooms, fresh herbs, and white wine sauce is tossed with fettucine for this.
