Filipino Food – Sinampalukang Manok

For the best Philippine authentic “asim” sarap dish, add fresh “sampalok” leaves.

This Filipino recipe will take from 50 minutes to 1 hour to cook and can make 6 up to 8 servings.

Sinampalukang Manok Ingredients

  • 1/2 kilo “sampalok”
  • 9 to 10 cups of water with “hugas” bigas (from washed rice)
  • 1 bunch “sampalok” leaves
  • 1 large chicken, whole
  • 3 tomatoes, quartered
  • 1 onion, sliced
  • 1 tablespoon rock salt
  • 1 “puso ng saging”, cut 2 inches long
  • 2 pieces “gabi”, peeled and quartered
  • 2 heads “mustasa”

Sinampalukang Manok Cooking Instructions

  1. Prepare the “sampalok” broth.
  2. Wash chicken and pat dry. Stuff cavity of chicken with “sampalok” leaves.
  3. Place chicken in a large stockpot and cover with water.
  4. Add tomatoes, onion, and salt. Bring to a boil.
  5. Lower heat and simmer. Add “gabi” and cook until tender. Put in the “puso ng saging”.
  6. Add until “mustasa” and simmer until cooked. Season with “patis”.
